The Saltram Winemakers Selection Barossa Valley Sangiovese is 100% Sangiovese harvested from our estate vineyard at Saltram situated on the eastern ridge of the Barossa Valley near Angaston.
Harvested on the 20th of March, the vintage conditions of 2012 brought out the best in this parcel of fruit. On the vine the fruit tasted of fresh dark cherries and was complemented by powerful powdery tannins and these characters remained through to the finished wine.
The vineyard now fourteen years of age having reached a certain level of maturity, ultimately expressing the potential of the variety in this unique aspect and location.
The fruit was fermented in traditional style open fermenters prior to a warm fermentation resulting with the fruit being on skins for up to ten days. After fermentation the wine was transferred on lees for maturation to a seasoned French oak vat and the balance to seasoned French oak barrels.
The wine was matured on lees which were stirred intermittently to enhance the wines savoury texture and tannin profile.
The seasoned vats where utilised to enhance the maturation of the fruits tannins without imparting too much oak aromatics into the wine.
